Amazing Pina Colada Crunch Cake

A cake with a twist

Crunch Cake is a southern American classic! The yellow cake layer is extremely tender with sugar and flaked coconut that creates that ‘crunch’. This recipe takes a classic American recipe and puts a whole new twist on it, incorporating the elements of a classic cocktail into the cake, sans alcohol of course.

The incorporation of the Pina Colada gives this cake a tropical beach like freshness and the addition of pineapple and crunchy coconut shavings also enhance this freshness.The cake has a crunchy granola bar crumb base and a creamy coconut-pineapple filling . The whole desert is topped with coconut shavings as a garnish.

16 Nature Valley™ granola bars Oats and Honey, crushed
1/3 cup toasted coconut
1/2 cup butter, melted
2/3 cup sugar
2 (8 oz.) blocks cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1 ( 3.4 oz.) package coconut cream pudding mix
1 (8 oz.) container extra creamy whipped topping
1 (8 oz.) can crushed pineapple
