Carrot Cake Magic Delight

It is a common misconception for people who haven’t tried a carrot cake that carrots and cakes should not be used together in a single recipe. How little do they know. Carrots have been used in cakes since medieval times and surprisingly, carrots have a lot of sugar in them, making them a great ingredient for sweet cakes. With carrots as the main ingredient, you will have a yummy and dense but soft cake.

What makes this recipe unique and magical is the fact that the cake is not formed as a single layer rather,  it slowly separates in 3 distinct layers. You have something similar to a dense pudding at the bottom, a custard filling in the middle, and a crunchy top layer, with all of them being delicious and offering something different and magical for everyone!

Ingredients:

4 eggs, separated, at room temperature
a few drops of lemon juice
1 Tbsp water
½ cup + 2 Tablespoons (150 g) sugar
2 tsp vanilla extract
1 stick + 2 tsp (125 g) butter, melted
¾ cup + 1 Tbsp (115 g) all-purpose flour
½ cup carrot puree*
2 tsp gingerbread spice (cinnamon, ginger, allspice, nutmeg, cloves)
2 cups (500 ml) milk, lukewarm
