This Carrot Sheet Cake Is Simply Amazing!

A simple yet delicious treat!

Made with finely grated carrot, eggs, flour and cinnamon, this spicy cinnamon cake is one right twist to the typical carrot cake. It is moist, tender and fudgy with smooth and creamy frosting. Good for the dieters too since it is made of grated carrots and is low fat! Looks quite simple and is also very easy to make.

This carrot sheet cake takes hardly 20 minutes to prepare and some 25 minutes to cook. This might be just the right recipe for a hurried thanksgiving party! The soft, creamy, cheesy frosting made with butter and vanilla essence is an add-on to the whole dish. Or should I say-cherry ion the top?

Ingredients:

For the Cake:

2 cups granulated sugar
1 cup oil
4 eggs
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon all spice
1/2 teaspoon salt
1/4 teaspoon baking powder
2 cups carrots, finely grated

For the Frosting:

1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
2 1/2 – 3 cups powdered sugar
2 teaspoons vanilla
