A Meyer is a lemon that is native to China and is said to be a cross between a true lemon and a mandarin or a common orange. The fruit is yellow and more round then a true lemon, and has a sweet and less acidic flavor. This recipe uses this amazing ingredient to make a cheesecake that you will never forget.
The recipe is very good and is totally tantalizing. It makes a cheesecake with a crust of gram cracker, pecans, sugar and melted butter. The cheesecake is soft and smooth and can be garnished with whipped cream and lemon slice before serving. Enjoy!

Ingredients:
For the crust
1 cups graham cracker crumbs
1 cup pecans
3 tbsp sugar
7 tbsp butter, melted
For the cheesecake:
2½ lbs cream cheese, at room temperature
1 cup sugar
3 tbsp lemon zest (from 4 Meyer lemons, or 2 regular lemons)
2 tsp vanilla extract
3 tbsp cornstarch
⅓ cup heavy cream
3 eggs
2 egg yolks
½ cup Meyer lemon juice
