Flavorful Mixed Berry Cream Cheese Crepes

Tangy lemon cream cheese, triple berry sauce and homemade crepes!

Sweet…tangy and ‘berry’ delicious! If those words made your mouth water, then you’re in luck! This recipe perfectly combines sweet crepes with a tangy cream cheese filling and a sweet and flavorful berry sauce. It can be a breakfast or dessert number with an explosion of flavors and textures, ideal for your beautiful spring mornings… or a year round option for berry lovers.

The highlight of the recipe calls for three different types of berries; raspberries, blueberries and strawberries. The other ingredients comprise of simpler items like milk, vanilla extract and cream cheese of course! The preparation of the filling and sauce is fairly simple and would be a great way to include any young ones in the process. Just keep an eye out so they don’t eat all your blueberries! Enjoy!

Mixed Berry Cream Cheese Crepes

Ingredients:

CREPES:
3/4 cup milk
1/2 cup water
1 tablespoon coconut sugar (or brown sugar)
2 teaspoons vanilla extract
2 large eggs
1 cup white whole wheat flour
BERRY SAUCE:
1 cup fresh or frozen raspberries
1 cup fresh or frozen blueberries
1 cup fresh or frozen sliced strawberries
1/2 cup sugar
1/2 cup water
1/4 teaspoon ground cinnamon
FILLING:
4 oz cream cheese, softened
2 tablespoons sugar
2 tablespoons lemon juice
