For the base of the cheesecake, use organic walnut halves and organic Medjool dates without the seeds. Put these in the food processor together with coconut shreds, unsweetened vanilla extract and salt. Pour it in the container and then freeze it for 20 minutes. After that, you can already proceed with the blueberry filling. This is now made up of soaked cashew nuts, maple syrup, lemon juice, blueberries, vanilla powder, organic virgin coconut oil and coconut milk. After this, you can already top it off with a blueberry jam and additional raspberries for a finisher!
