The Amazing Kentucky Butter Crunch Cake

Cruncy! Crunchy! Cruncy!

Make your breakfast or dessert one with a difference, with this amazingly flavored cake. After baking, the longer it stays in the fridge the better e.g. you can bake in the evening and leave it in the fridge overnight.

It takes only 1 hour and 10 minutes to prepare and bake and the ingredients required are the simplest, always available in your local stores. With flour, butter, cream cheese, sugar and vanilla extract for the cake, you are good to go.

Ingredients:

3 cups flour
2 sticks butter, room temperature
4 ounces cream cheese, room temperature
1 cup buttermilk
1 cup brown sugar
1 cup white sugar
4 eggs, large
1 tablespoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt

For the Crunch Topping:

1 stick butter, room temperature
1 cup cream cheese, room temperature
3 cups confectioners sugar
2 cups toasted coconut
2 cups chopped almonds
1 teaspoon vanilla
milk to thin
