Lovely Heart Shaped Cherry Hand Pies

With valentine’s day around the corner, people are frantically going around buying presents for their loved ones. You can save yourself the trouble of finding the perfect gift and just make things easier by making one yourself. With that thought in mind, these heart shaped cherry hand pies are the perfect way of saying “I love You”.

This recipe has a soft, sweet and sour cherry filling which perfectly complements the crunch of the pastry which covers it. The sweet and sour filing is made from canned cherries which makes the filling e faster and easier to make. When it comes to the crust, all you have to do is cut it in the right shape, fill it and bake it to perfection.

Ingredients:

1 can red tart cherries in water; reserving half of the liquid (I buy Oregon Fruit Products, usually sold in the canned fruit section rather than with the canned pie fillings in the baking aisle)
2 tablespoons cornstarch
1/3 cup sugar, plus extra for sprinkling
Scant 1/4 teaspoon of almond extract
1 recipe pie crust (see below, or buy if you prefer)
Egg wash (1 egg whisked with 1 tablespoon water)

PIE CRUST INGREDIENTS

3 cups flour (I use half white whole wheat flour and half all-purpose flour) or pastry flour
1/2 teaspoon salt
2 tablespoons sugar
1 cup butter (2 sticks), sliced into tablespoons
12 tablespoons ice water
