Mouthwatering Caramel Mountain Top Cheesecake

No baking required!

This is the best dessert you will ever taste. Believe me! Imagine yourself at the beach on a summer afternoon, sun bathing and beside you is a plate of this Mouthwatering Caramel Mountain Top Cheesecake and some iced cold drink. Now, that is what we call enjoying life at its best!

This cheesecake comes in 2 layers but its very simple to make. The base layer is made from your favorite digestive biscuits and the smooth sweet topping is a blended mixture of cream cheese, fresh whipping cream, and marshmallows. Its absolutely yummy and out of this world!

Ingredients:

The Base
2 1/2 oz or 75 g butter
8 oz or 220 g Digestive Biscuits (cookies, see below) or Honey Graham Crackers

The Filling
7 fl oz or 200 ml fresh whipping cream
7 oz or 200 g cream cheese (room temperature)
2 Tablespoons Icing sugar / powdered sugar (optional)
5-6 Tablespoons of Dulce De Leche (soft)
2 Tablespoons Icing sugar / powdered sugar (optional)
1/2 Cup mini marshmallows or large marshmallows chopped into mini ones.
3 Tablespoons of mini malteser like chocolate bits, or little fudge bits. I like malteser bits for the crunch
