You can bank on these almond cakes.

If you’re looking for a refreshing fruity treat, this recipe is for you. These French almond cakes are baked in mini muffin pans so they’re not in their usual rectangular shape, but they taste just as delightful. This recipe is so simple and quick, perfect for when you want to enjoy a sweet treat with your cup of coffee or tea.

The cakes are perfectly moist and rich, with the toasted butter and almond meal giving it a wonderful bold and nutty flavor. The great thing about financiers is that you can make them with any kind of fruit. Peaches are a fantastic option, perfectly complementing the cakes, but you can also pick out any kind of fruit that’s in season.

You can enjoy these warm or at room temperature, and they will be just as fantastic!
