Sauerkraut Peanut Butter Chip Cake

Deception at its best!

‘Everything is not what meets the eye’ is a perfect way to describe this recipe as it has a mysterious ingredient that one doesn’t generally associate with deserts. The ingredient is sauerkraut! and yes, you read that right . The sauerkraut which is used in this recipe is your average variety sauerkraut which can be found at your local supermarket .

All one has to do is wash it and chop it up and all the sour from the sauerkraut becomes sweet and this odd addition becomes a vital member of this recipe as it adds much needed moisture to the dish. Peanut Butter is also one of the main ingredients of this recipe and provides a nutty backdrop to the sweetness of the other ingredients in the recipe.

Peanut Butter Chip Cake

Ingredients:

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, room temperature
1/2 cup extra-crunchy, super chunk peanut butter
1 cup granulated sugar
3/4 cup dark brown sugar
4 eggs
1 teaspoon vanilla
1 cup sauerkraut, rinsed, well-drained and finely chopped
1/2 cup mini-semi-sweet chocolate chips plus more for sprinkling on top
Salted, dry-roasted peanuts for topping
