Scrumptious No-Bake Red Velvet Cheesecake Recipe

Scrumptious No-Bake Red Velvet Cheesecake Recipe

BASE:
  • 200 g red velvet timtams*
  • 1 T melted butter
FILLING:
  • 450 g cream cheese
  • 1 1/2 c heavy whipping cream
  • 1/3 c caster sugar
  • 1 T Vanilla Essence
  • 1 T cocoa powder
  • 1 T red food dye

  • 200 g red velvet timtams*

  • 450 g cream cheese
  • 1 1/2 c heavy whipping cream
  • 1/3 c caster sugar
  • 1 T Vanilla Essence
  • 1 T cocoa powder
  • 1 T red food dye
Instructions
For The Base
  1. Crush cookies in a food processor, or if you don't have one use a large zip lock bag and a rolling pin.
  2. Place cookie crumbs into a bowl and add butter.
  3. Mix together until well combined.
  4. Pour into a greased cake tin and press down with a spatula.
  5. Place in the refrigerator for while preparing the filling.
For The Filling
  1. In a large bowl beat the cream cheese and vanilla until smooth and creamy (about 3-5 minutes).
  2. Add the whipping cream and beat until mixture thickens.
  3. Add sugar and beat for a further minute until combined.
  4. Remove about 1/4 of the mixture and place in a small bowl.
  5. Sift in the cocoa, then add the food dye. Mix well until combined.
  6. Pour the white mixture (reserve about about 1/4 cup) on top of the base and spread out.
  7. Then do the same for the red mixture.
  8. Dollop over the remaining white mixture and use a skewer to create a swirled pattern on top of the cheesecake.
  9. Place in the fridge and leave overnight.
  10. Serve, eat and enjoy!
Recipe Notes

*If you're not using red velvet cookies, use Oreo's but before you add the melted butter mix in some red food dye, the results will be the same.
