Sweet ‘N’ Creamy Chocolate Coconut Cake

Black & white perfection!

This chocolate coconut cake is a huge hit. We all know how good chocolate and coconut combination is. Lovely contrast of light and dark. A winning combination!

Incredible from the outside and amazingly good taste. The recipe is from Brown Eyed Baker and it is delicious to the extreme. The frosting is phenomenal. Paired with the crunchy, barely salted coconut flakes, it is mind blowing. It is super moist, super chocolatey, and not too sweet. I know that this cake will be on your favorite list of cakes and oftentimes on your plates.

Ingredients:

Chocolate cake:
Butter, for greasing the pans
1 ¾ cups all-purpose flour, plus more for the baking pans
1 cup sugar (original recipe has 2)
3/4 cups good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup coconut milk, shaken
1/2 cup coconut or vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed, strong hot coffee

Coconut meringue frosting:
1½ cups granulated sugar
6 egg whites
1½ cups unsalted butter, at room temperature, cut into pieces
1 teaspoon vanilla extract
¼ teaspoon kosher salt (plus more if preferred)
⅔ cup coconut milk
1 cup sweetened shredded coconut
