The Perfect Mini Pumpkin Pies

Small in size but big in taste!

Pumpkin pie is a traditional thanksgiving dessert and this recipe takes an original take on the classic pumpkin pie recipe by simple making them into mini pumpkin pies. As such, they go from slices sized portions to bite sized portions. These bite sized delights are super moist yet have a crunchy crust and have a earthy pumpkin spice flavor which leaves your taste buds asking for more.

These mini pumpkin pies are super easy to make because instead of making your own pie crust you can just buy a ready-made one. They are also amazing if you want to lose weight as the recipe makes use of wholesome organic cane sugar. Enjoy!

Ingredients:

2 boxes puff pastry, 4 sheets total
4 ounces cream cheese (could be low fat)
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup Wholesome!™ Organic Cane Sugar, or 3/4 cup Wholesome!™ Zero
1 large egg
3 tablespoons heavy cream
1 teaspoon vanilla extract
2 teaspoons pumpkin pie spice
