For a dinner party involving a few surprise guests, I whipped up some lemon raspberry cheesecake desserts using a popular video recipe. The best things about this recipe are that it’s easy to make, requires no baking, and that it was done using some ingredients that I already had on hand. I crumbled the sandwich cookies for a base, and zested a lemon onto them. Melted butter was mixed with the cookies to for a base, which was then pressed into serving containers.
A few raspberry containers where placed on top of the base, and then I moved onto the cheesecake filling. A handy package of pudding mix, powdered sugar, lemon juice and zest, cream cheese, and cream where whipped together until thick and then loaded into the containers, right on top of the raspberries. Just a few leaves of mint, whipped cream, and a raspberry were placed on top, and the cheesecake was done. It was a big hit with my friends.
