Banana and coconut are ingredients that are best for the summer as they seem to have a tropical vibe which suits the weather just perfectly. This cake is made with multiple alternating layers of cake and cream and sliced bananas.

The coconut adds an element of texture through the use ofcoconutshavings which are adhered to the meringue. The recipe is actually quite easy to make and the instructions are easy tofollow and the only drawback is the time taken for the preparations of the final dessert which takes a couple of hours.

Ingredients:

10 1/2 tablespoons (1 stick plus 2 1/2 tablespoons) unsalted butter, softened
1 2/3 cups sugar, divided
1 1/3 cups (170 grams) all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1 pinch salt
5 large eggs, separated
1/3 cup whole milk
1/3 to 1/2 cups unsweetened coconut flakes
1 cup heavy cream
1 vanilla bean
1 to 2 bananas, sliced
