Adorable Graham Cracker Éclair Cake Recipe
- 27 square graham crackers
- 1 tub (1L) of cool whip, thawed
- 1 1/2 cups cold milk
- 1 (3.4oz) instant vanilla pudding mix
- Grated chocolate (optional)

Mix together the milk and vanilla pudding mix in a bowl, then set aside for about 5 minutes to allow the pudding to thicken

Line an 8×8 inch square pan with foil or parchment paper, then place a layer of graham crackers on the bottom (Mine fit about 9 per layer)

Once thickened, add your thawed cool whip and mix until smooth

Divide the mixture evenly into three bowls

Start layering your cake, alternating with your mixture and graham crackers and ending with your cool whip mixture

Top off with grated chocolate or chocolate frosting

Place into fridge for 4 hours to set.
