Vegan Red Velvet Whoopie Pies Recipe

  • 1 1/2 Cups Oat flour
  • 1/4 Cup Coconut sugar
  • 1/4 Cup Sweetener
  • 3 Tbsp Coconut oil
  • 1 Flax egg – 1 tbsp ground flax + 3 tbsp water
  • 1-3 Tbsp Cocoa powder
  • 1/3 Cup Pureed beets
  • 1/3 Cup Almond milk
  • 3/4 tsp Baking powder
  • 3/4 tsp Baking soda
  • 1/4 tsp Salt
  • 1 tsp Vanilla
  • Coconut whipped cream
  1. Preheat oven to 350°F.

  2. Whisk together dry ingredients and set aside.

  3. Beat oil, sugar, flax egg, beets and vanilla in another large bowl.

  4. Add ½ dry mixture to wet, alternating with ½ of the milk, until everything is combined. Beat until smooth.

  5. Drop batter by the tablespoon onto a baking sheet. Flatten out with the back of the spoon if you’d like them to be flatter whoopie pies.

  6. Bake until firm to the touch, about 8 minutes.

  7. Cool on the pan until cool to the touch.

  8. Fill with your coconut whipped cream filling (add extra powdered sugar to make it more firm).

  9. Chill for about 30 minutes before devouring.

  10. Serve and enjoy!
