Four layers of pure delight

This peanut butter fudge chocolate cake is a multipurpose cake which can be used for birthday parties, dinner parties, picnics… the list never ends, the cake just tastes so good it goes with anything and everything. The cake consists of four layers of chocolate cake, which is covered in rich peanut butter frosting and tastes exactly like peanut butter fudge.

On top of the frosting, a decadent chocolate ganache is piped and is given a generous sprinkling of peanuts. The peanut and chocolate flavor go wonderfully together and the cake tastes as good as it looks and is actually quite easy to make.

Ingredients:

2 cups all-purpose flour
2 ½ cups sugar
¾ cup unsweetened cocoa powder (Dutch process), I used Pernigotti
2 teaspoons baking soda
1 teaspoon salt
1 cup vegetable oil
1 cup sour cream
1 ½ cups water
2 tablespoons distilled white vinegar
1 teaspoon vanilla extract
1 teaspoon instant coffee granules
2 eggs
1/2 cup roasted peanuts, chopped
