No Bake Lemon Cheesecake Recipe

  • 60g caster sugar
  • 150ml double cream
  • 300g cream cheese
  • 2 unwaxed lemons
  • 250g biscuits
  • 90g butter
  1.  Add crushed biscuits to melted butter and mix until the texture of damp sand

  2. Press mixture into the base of a cake or flan tin and refrigerate

  3. Zest lemons and add cream cheese – mix until smooth

  4. Add sugar and cream and mix until smooth

  5. Pour mixture over biscuit base and shake very gently to spread out the mixture evenly

  6. Place in the fridge for at least 4 hours before serving

TIPS:
Instead of making a lemon cheesecake, make a lime cheesecake but switching your lemon zest for lime zest from 3 small limes or 2 larger ones
