Rich Marshmallow Chocolate Cake

Three layers of deliciousness!

Chocolate cake, marshmallows and chocolate icing what else does one want in a desert. This desert consists of three layers. The bottom layer consists of a lovely decadent chocolate cake. The second layer is a delicious topping of mini marshmallows and the pièce de résistance is the layer of rich chocolaty, fudgy, icing on top. This rich icing sandwiches’ the marshmallows between the cake and the icing.

The icing is made with vanilla essence, butter and sugar which are boiled together and then chocolate chips are added to the mixture. The white of the marshmallow layer provides the perfect contrast of color to the brown of the chocolate which gives the dish a visually appealing look.

Rich Marshmallow Chocolate Cake

Ingredients:

For the cake:
1 (15.25 oz.) package Devil’s Food cake mix
3/4 c. water
3/4 c. canola oil
4 large eggs
1 (10 oz.) package miniature marshmallows

For the icing:
2 c. granulated sugar
1/2 c. (1 stick) unsalted butter
5 oz. evaporated milk
1 (12 oz.) package semi-sweet chocolate chips {2 cups}
1 tsp. vanilla extract
